Maybe the system is not wired correctly. The thermostatic switch (freeze switch) in the evaporator should open the circuit that powers the compressor clutch and stop the a/c compressor from pumping when the evaporator cools to around 38 to 36 degrees.

The thermo switch probe goes in the center of the evaporator (half way down half way in). Usually you can hear the switch click out when it is cool and click back in as it warms.

If either wire is disconnected from the therno, switch the compressor should stop running.
