I have a 2000 peterbilt 379 with a 3406E cat. The engine oil gauge will read correct until I push on the throttle and then the oil temp will go down and back up when I let off the throttle. Is this a grounding problem or can the wires be making contact? Its not the guage. I changed to sending wire on the back to another gauge and it did the same thing. also I switched the ground wire on the gauge with another gauge and it still did the same thing. Thinking a new wiring harness!!!

I,d change the sender in the pan first. Either way the oil temp. will always be within 5 degrees of water temp. Oil is cooled by water at the oil cooler.
