7.3 international pulls hot

i have a 91 F-350 dually with a 7.3 and five speed, low geared and pulls well for what it is but when pulling especially on hills you can watch the temp guage climb gradually, never has overheated but i'm told its easy to melt one of these engines down and i'd rather that not happen, its bone stock 200k on it only thing thats been done is fuel pump turned up three flats. thanks for any help
